Engaged Life Couple of the Week: EJ & Lauren
Love stories come in all forms, but every once in a while, one comes along that feels almost like fate. That’s exactly how EJ and Lauren’s story unfolded—from a serendipitous first meeting to an unforgettable proposal, their journey is one for the books. We are beyond excited to share their story as this week’s Engaged Life Couple of the Week!
A First Date to Remember
Lauren and EJ’s love story began in Birmingham, Alabama, where their first date took place at Collins Bar. Nestled near the Cathedral of St. Paul—the very church where their paths first crossed—it was the perfect setting for the start of something special. They talked so much that night they ended up being the last ones in the bar. But just when Lauren thought the night couldn’t be more memorable, they walked outside to find EJ’s car had been towed! Instead of letting it dampen the mood, they laughed it off, called an Uber, and turned it into a funny story they still tell to this day.
When You Know, You Know
Lauren and EJ’s connection was instant, like meeting someone they had known forever. Their families were already intertwined—he knew her brothers, she knew his sister—yet somehow, they had never met. When they finally did, it was clear the universe had been working behind the scenes all along.
“I knew he was the one because it just felt right. We met at my church, the one I’ve been going to my entire life, without any setup or planning. We’re both Catholic, both Italian, and—crazy enough—we even share the same last name.” If that’s not fate, we don’t know what is!
The Proposal: A Perfect Surprise
EJ planned every detail of the proposal flawlessly, keeping it a complete surprise from Lauren. On the last day of her job before starting a new opportunity, he suggested they go to dinner at Shoal Creek Golf Club to celebrate—a place he had been wanting to take her for their famous member dinners. She thought nothing of it, believing they were simply dressing up for a nice evening out.
When they arrived early, EJ led her to the 14th hole, which overlooks a breathtaking valley. As he pointed out the view, he got down on one knee and asked her to be his wife. Lauren describes the moment as surreal—half of her was screaming, “IT’S HAPPENING!” while the other half was still thinking about dinner plans. But when she saw her best friend (a photographer) capturing the moment from the bushes, she knew it was real. “It was the easiest and happiest yes I’ve ever said.”
The surprises didn’t end there—after celebrating their engagement with a mini photo session, EJ took Lauren to his parents’ house, where their family and friends were waiting for a surprise engagement party. Talk about a dream proposal!
Wedding Planning & Personal Touches
Lauren has loved every step of the planning process, but a few highlights stand out—finding her dream dress after months of searching, choosing the music for their Mass and reception (as a classically trained opera singer, this was especially meaningful to her), and, of course, cake tasting with EJ. “We probably had too much fun taste-testing cake,” she admits.
As for their wedding day vision? Timeless, elegant, and deeply meaningful. They’re planning a large, traditional Italian wedding filled with stunning florals, classic details, and a whole lot of love. But one thing’s for sure—while the ceremony will be steeped in tradition, they’re ready to party at the reception!
For EJ and Lauren, the most important part of the day isn’t the decor, the food, or even the party—it’s the sacrament of marriage. “At the end of the day, it’s about us becoming man and wife, and that will always be the most important thing.”
A Love Rooted in Faith & Adventure
Beyond wedding planning, EJ and Lauren cherish their traditions and shared passions. Whether it’s cooking together, taking sunset boat rides on the lake, or visiting the Shrine of the Most Holy Blessed Sacrament at Christmas time, they prioritize the little moments that make their relationship strong.
One fun fact? They both love the number 22 and incorporate it into their lives in different ways.
When asked to describe their relationship in three words, they chose passionate, electrifying, and faithful. And we couldn’t agree more.
Looking Ahead
As they prepare for their future together, EJ and Lauren are most excited about experiencing everyday life as husband and wife—learning each other’s routines, growing together, and keeping God at the center of their marriage.
Their biggest goal? To inspire each other to live their best lives every day, with faith leading the way. Because as Lauren beautifully puts it, “Everything else will fall into place.”
